Ingredients

  • 1 pound spicy Italian sausage, casings removed

  • 1 tablespoon olive oil

  • 1 onion, finely chopped

  • 1 carrot, peeled and finely chopped

  • 1 stalk of celery, finely chopped

  • 3 cloves garlic, minced

  • 1 can (28 ounces) crushed tomatoes

  • 1 tablespoon tomato paste

  • 1 tablespoon fresh chopped thyme (optional)

  • 1 tablespoon fresh chopped rosemary (optional)

  • Salt and pepper, to taste

  • Fresh basil leaves, for garnish

  • Grated Parmesan cheese, for serving



Instructions

  • In a large skillet, warm olive oil over medium heat.

  • Add the onion and garlic, and sauté for a few minutes. Then, incorporate the carrots and celery, stirring for an additional five to seven minutes.

  • Remove the sausage from its casing and crumble it into the mixture. Cook for seven minutes, stirring over medium heat.

  • Mix in the crushed tomatoes and tomato paste.

  • Add the fresh herbs.

  • Season with salt and pepper to taste.

  • Allow the sauce to simmer for 45 to 60 minutes, stirring occasionally, until it thickens.

  • Serve the ragu over your favorite pasta, garnished with fresh basil and Parmesan cheese. Enjoy!
